I needed to use away some things i had in my fridge since they would have gone bad by the time i come back from my trip. Well, mainly i had to use away some yoghurt and quarck. I came up with this recipe for a pie. It's a modification of a quarck pie recipe i've used before. I made a normal and a gluten free pie to give to my dad and brother and then mom. My parents are watching my dog while i'm away so i needed to give them something in advance as a thanks for that. This pie is really easy to make.

Yoghurt pie:

Batter:

- 4 dl wheat flour

- 2 dl sugar

- 1 tsp baking soda

- 1 tsp baking powder

- 1 tsp vanilla sugar

- 125 g margarine

- 1 egg

- 1 dl unflavoured yoghurt

Mix together the dry ingredients and add the molten margarine. The mixture should end up looking like crumbs. Take 1/3 to half of it into a separate bowl and add the egg and yoghurt in the leftover batter. Press the batter in a pie casserole lined with baking paper or oiled. Leave the crumbled looking batch in the separate bowl waiting for a while.

Filling:

- 200 g quarck

- 2 dl yoghurt

- 2 tsp honey

- 1 egg

- strawberries

- blueberries

Blend all the ingredients but the blueberries together in a blender or mix the other ingredients in the crushed strawberries. Sprinkle the blueberries on top of the batter in the casserole. Pour the filling on top.

Sprinkle the crumbled part of the batter base on the filling as a crust for the pie. Bake in 200 degrees celcius for about 20 - 30 mins. Let cool before serving. This kind of pie isn't at it's best when warm.

For the gluten free version switch the 4 dl wheat flour to 3 dl gluten free flour. An easy way to make most things gluten free is calculating 3/4 of the flour amount and making that gluten free flour. There are other additives for making gluten free things seem more like normal baked things, but i so far haven't used those in my recipes.
