Last night i craved pizza and i hadn't made any in a while so i made some. This is the perfect thing to make when you don't want to make something really unhealthy but you want to curl up on a sofa to watch a new episode of your favourite tv show, or to serve something when friends come over. Or in my case, both.

I've been making this pizza for well over 10 years with this recipe and everyone's always liked it. It's originally from some cook book, i believe. I hardly measure things for it anymore. I just throw them in, but this is the way i got the recipe.

- 2 dl water

- 30 g yeast

- 1/2 tsp salt

- 4 tbsp olive oil

- ~ 5 dl flour

Tomato sauce:

- 2 onions

- 2 - 3 cloves of garlic

- 3 tbsp olive oil

- 400 g crushed tomatoes

- oregano

- basil

- 1 bay leaf

- salt

- black pepper

- other spices

Dissolve the yeast in the about 38 celcius degrees warm water in a bowl. Mix in the salt and oil. Add the flour a little at a time and knead the dough until it turns into a nice ball and doesn't stick to the bowl anymore. You can use wheat flour or some other flour that you feel suits the purpose. I often use a mixture of different kinds of flour. Let rest in a warm spot under a kitchen towel while you make the tomato sauce.

Chop up the onion and chop or crush the garlic. Fry them in a saucepan in oil until they become soft. Add the crushed tomatoes and the spices. I often put some chili and paprika in mine along with the other spices, but those weren't in the original recipe. Let simmer on low heat for about 20 mins or until some of the water has boiled away and the sauce is no longer so liquid.

Prepare the toppings of your choice. You can choose anything you want really. I used green olives, red paprika, feta cheese, blue cheese, jalapenos, red onion and fresh basil, along with grated cheese on top of course (I didn't have quite as much cheese at home as i would have wanted). Roll the pizza base flat on an oven pan. I usually make a whole oven pan sized pizza, but this time i made 2 round pizzas. Take the bay leaf out of the tomato sauce and spread the sauce on the pizza. Put on the toppings and bake in 250 degrees celcius for 15 - 20 mins. Enjoy.

I would have taken more pictures of the process, but i kinda forgot and then my friend showed up already. Oh well, maybe some other time i make it i'll add some. It's not like it's a hard recipe to follow without illustrations.

Here's how my pizza turned out:
