I had been wanting to make filled bread ever since i saw Anna Olson make a Club sandwich roll on Fresh, but i didn't write the recipe down then and didn't remember what it was called for a long time and i guess i forgot about the whole thing for a while. Then Kinuskikissa posted her recipe of Italian bread in a pan and i immediately wanted to try a little modified version of it. My bread isn't strictly Italian, since i've added capers and feta cheese in mine, so those being kind of Greek ingredients i decided to call my version Mediterranean. This recipe makes 2 loaves of bread.

 

Mediterranean filled bread:

Dough:

- 5 dl water

- 2 tsp salt

- 1/2 tsp honey

- 50 g yeast

- 5 dl bread flour (hiivaleipäjauho)

- 2 dl graham flour

- 2 - 3 dl all-purpose flour

- 1/2 dl olive oil

- handful of pumpkin seeds

Dissolve the yeast in just above hand temperature water. Add the salt and honey. Mix in most of the flour and add the oil and pumpkin seeds. Knead while adding the rest of the flour until the dough makes a nice ball and doesn't stick to the sides of the bowl. Let rest in a warm spot while you prepare the filling.

Filling:

- 2 onions

- 2 cloves of garlic

- 1/2 dl sundried tomatoes

- 1/2 dl chopped olives

- 2 tbsp capers

- 100 g feta cheese

- 2 - 3 tsp oregano

- 2 - 3 tsp basil (i also used fresh basil on top of this)

- black pepper

- olive oil

 

Chop up the onion and garlic. Fry them in some olive oil until they've become soft. Smear some oil also in the bottom and sides of 2 bread pans.

Divide the bread dough in half. Roll each half flat and spread the fillings on top of the dough evenly. Roll up the bread and fold the ends of the roll under it. Place the rolls in the bread pans and let them swell in a warm spot for atleast half an hour. Bake in 175 degrees celcius for about 45 mins.

 

There you go, your own freshly baked bread. I can never get enough of this. Try it straight from the oven with some butter melting on top and enjoy relaxing after a long day with a cup of tea... Who will bother making sandwiches anymore when you're going on a picnic when you can bake the toppings in the bread? Here's mine:
