I found some honey marinated chicken from the freezer so i thought i should use it off. This is once again one of those really easy recipes. That seems to be becoming some kind of a motto for me. There's enough chicken sauce for two meals and you can either make more fresh couscous when you're eating the other half or make for example pasta, which i often make with this chicken sauce. Providing of course that you intend to eat alone.

Chicken sauce:

- 300 g honey marinated chicken

- 2 dl cooking cream

- mini carrots / green beans / paprika etc.

- black pepper

- thyme

- parsley

Fry the chicken until it's cooked and mix in the cream. Throw in also the chopped vegetables of your choice. I only found some mini carrots from my freezer so i used those. Season with some spices. Leave on low heat and make the couscous while the sauce simmers.

 

Vegetable couscous (for one)

- 1 tbsp olive oil

- 1 dl water

- 1/4 tsp salt

- 1 dl couscous

- 1 tsp margarine

- drizzle of balsamic vinegar

- red onion

- celery

- green beans

(- paprika etc.)

Bring the water, oil and spices to a boil in a saucepan. Add the vegetables and let boil for a minute. Take the saucepan off the heat and mix in the couscous, margarine and vinegar. Let the couscous suck up the moisture and get soft and it's done.

I often make just the couscous as a quick meal by adding for example some shrimp in with the veggies.
